3 Ingredient Fruit Cake

I made this fruit cake today. I couldn't believe it worked.

1kg dried mixed fruit
700 ml chocolate milk
2 cups SR flour.

Soak the fruit in the milk overnight.
Mix the flour through 1 cup at a time.

Place in a 9 inch tin lined with baking paper. Bake for 2 hours at 150C according to the recipe, I needed 2.5 hours.

It tastes fantastic. I used lactose free low fat milk and it worked perfectly.

Recipes like this should be banned! I immediately wanted a slice but of course if I eat sweet loaf I die.... or that's what they tell me .....

It looks yummy Liz, It equates to 3750 calories for the whole cake/loaf, do the math for the number of slices. Individually slices will probably come out somewhere around the energy bars I make for cycling, instant sugar hit. Fruit, milk and a bit of flour to make it all stick together, what more do you need, nice one.

If I remember rightly 3500 calories = 1 lb of fat. But so what.

3500 calories can equate to all kinds of things but in this case it is not fat. It's mainly carbs with a high sugar content, there is actually about 15g fat content contributed by the milk.

It was supposed to cut into 12 but at this house it will be a lot more, probably more like about 18 slices, but that's still about 200 calories per slice. It is incredibly rich but alas there was another problem. I didn't read the milk label properly and although I used lactose free milk there was a number in there that made me quite sick. So in my case it won't matter how many calories there are in a slice.

How about posting your recipe for the energy bars. That's something I'd make.

You have jogged a memory with that fruit cake.
I recall that ( hee hee...some 30 odd years ago) there was a recipe floating about that used strong cold tea to soak the fruit overnight but was otherwise the same. I used to add cinnamon and cloves to the tea too...
Does this ring a bell with anyone else?
Might help your tummy problem, Liz, AND reduce calories in the cake!
