200gm of sweet herring pickle for dinner and shock horror, a pizza for tea. 20gm of dark chocolate and nuts after, no apple.

We had pizza for tea also. I made a meat one for Jack and myself and Sally had just a veggie one. I made the pizza dough in the bread maker. Toppings were, tomato paste and olive oil first on the base, coriander, fine sliced onion, then a layer of grated mozzarella, large sliced vine tomatoes, sliced fresh red and orange bell peppers then more grated cheese, sliced chorizio sausages then topped with rough chopped mozzarella, black pepper and basil. Very tasty. :biggrin2:

I just fancied one so got a Co-op one and supercharged it with a bit more cheese!
Steak pudding and peas for dinner. Wiener Schnitzel (prepared by Brown's) with veggies and a sweet chilli and peanut butter sauce for tea.

I had one of my sausage, bean and veggie stirs from the freezer but I added the spare chorizo sausage slices chopped up. A couple of slices of chia bread to go with it.

BSL was 5.5 tonight, 2 hours after a Wholemeal Wrap with Steamed Chicken Breast, Lettuce, Cucumber, Shaved Cheese and Lite Sour Cream. ( which filled me tip top full)
I haven't challenged my BSL with Pizza yet. It stands as my last "great unknown" as far as my blood sugar levels go. I do know that Rice and Pasta are my enemies. ( potato doesn't bother my blood sugar and neither does Red Wine on weekends - so there IS a God! Strangely enough, bread doesn't seem to either, though I have never eaten bread in huge quantities, so at the most, I am only talking one slice.)
I have now lost 8 kilos since being in hospital. I put it down to dealing with severe pain, day in and day out. It can really take it out of a person. Only 10 days to go now until I see the surgeon, though I have had it drummed into me that I can admit myself at any time of the day or night prior to that and have my pain treated with stronger drugs. I have hung on this long, and will see it through. Home is sooooo much better!

Glad you are managing to keep going Maz. Fascinating to see which foods affect blood sugars isn't it? Rice and pasta have a lot to answer for, we based most meals on one or the other for years believing the NHS advice that it was good for diabetics. Alcohol , especially red wine, lowers blood sugar levels nicely. :smile:

We have a similar favourite chicken meal but use cos lettuce as the wrap.

Low carb lasagne last night. I roasted the aubergine slices for 30 minutes to dry them out a bit before using them as 'lasagne sheets' and used ricotta, eggs and a bit of double cream for the sauce. The ragu was a mix of beef and pork with onion, courgette, carrot, celery tomatoes, beef stock and a bottle of beer. I reduced it to within an inch of its life and the built up the layers with the addition of some extra mature cheddar, it went down very well with some salad.

I'll bet it did!
Home made beefburgers for us tonight, with loads of salad, pickles and coleslaw. Col reports problems with finding thick, creamy coleslaw, it's all reduced fat stuff. We are going to have to make our own again.

I will be experimenting with beefburgers on Monday, adding a teaspoon of bicarbonate of soda and a splash of carbonated water to the minced beef, makes them very light and 'fluffy'. One of my work colleagues brought in some spicy beef patties last week which used the same method, they were very good.

As well as Rice and Pasta, anything with Pastry is on my banned list too.
On my last GP visit, he was checking my record I keep of twice daily blood sugar readings, and found a higher one. I hung my head in shame and confessed it was half a pie I ate. No more pies Maz.

Steak pudding and peas for dinner, small pork pie and peas for tea.... Not very imaginative I know but it suited the day.... I have a nice piece of braising steak so a bit of cooking is indicated!

Made the braising steak into a beef stew. Dinner was a small pork pie plus gravy and veggies from the stew. Tea was a small portion of stew, good but not quite up to speed yet.

I know I have very little imagination on variations of food but I seem to be doing OK off it and always enjoy it.

I had 200gm of sweet pickled herring with grated Cheddar and two boiled eggs for dinner and the last of the beef stew for tea. Butcher's day today and so I shall be looking for my favourite fruit!

I'll bet you can guess.... Steak Pudding and peas for dinner and a small pork pie and peas for tea. I know, total lack of imagination but I do enjoy them! I don't see this as a fault, I think I am lucky to have such simple tastes.

I get mine from our master pie,pudding and pastie maker Miles on Newtown, not in the industrial quantities that Stanley gets through though. :extrawink: :smile:
