Chippy tea, steak pudding, chips and gravy. Brought round by our Jack. Double edge sword, checking up on me as Sally has gone off with Carla on a bunk barn weekend up at Ingleton, part of the extended 40th celebrations. They are walking up Whernside today. It will do both of them good to stop worrying about me for a while. I'm on a bacon butty for lunch or maybe homemade soup and a previously concocted sausage stew from the freezer for tea. My appetite has not been affected by my recent adventure and I need the calories anyway, bloody exhausting doing anything at the moment. Thankfully not putting on any weight though, I have actually lost 3lb despite having three courses at every meal in hospital. If you commit to the effort you need the fuel. :good:

Dinner at 11:00 and tea at 17:00. That's it China.
Scotch egg, mushy peas and sprouts for dinner. Two sausage and sprouts for tea. Nuts and an apple by 18:00 then fasting ready for Airedale. That's no problem as it's my normal regime.

Hospital grub for two days. I ate everything that was put in front of me, no sign of a diabetic menu! I didn't complain but went with the flow! I was never hungry and everything is functioning. Back on high protein and low carb today. I shall eat little and often!
Susan has made me a chicken dish and delivers it at midday.... Daughter's are wonderful. I shall phone my order to Cath this morning and she'll deliver.

Unless you were on a different regime to my experience you would have had what you ordered. Multiple choice at Breakfast, Dinner and Tea, plus the interim brews from the tea trolley. Hospitals do have menus for diabetics, halal and other specialist diets if you ask the catering staff. Catering is a privatised service and does not necessarily run directly off your medical notes by default. I take it you had your blood sugar tested?

Yes Ian, frequently and always passed, I asked.
I understand about the menu, I asked the first day about an alternative but even that had carbs in it so I went with the flow, I'm not that sensitive to forbidden foods! (Caterer is Sodeco)
Kath delivered my butcher's order yesterday, I am walking normally but decided carrying extra weight was a bridge too far!
Sausage and mushy peas for dinner, Susan's chicken and dumplings for tea. I shall remind her of my mission to avoid carbs for future reference. (But the dumplings were nice!)

I shopped for veggies yesterday and got carrots, sprouts and cauliflower. I want to get fresh veggies back in my diet. dinner was a steak pudding with mushy peas and veggies. Tea was a scotch egg with the same veggies. Nuts, 20gm of dark chocolate and a small Cox apple for afters. (I know the apple increases sugar but I think the overall benefit is good.)
Susan gave me a plastic pot designed for microwaving with my chicken and dumplings in it and she says I can keep it. It has a lid and is a great improvement on my usual glass bowls. So you can teach an old dog new tricks!

The mutton shank cooked slowly all day yesterday in cider. By dinnertime it was cooked and I stripped the meat off. I shopped for carrots and sprouts and cooked them before adding to the shank and cider. For dinner I had the last of the veggies I cooked earlier, added a small tin of mushy peas and one sausage. I put the remaining sausages in with the shank and for tea I had a bowl of the new stew. Nuts, dark chocolate and a small apple for pudding. So nice to be back into the mutton stew again...... (Isn't shank sweet meat!)

No dinner as such yesterday, just a sausage and a small bag of crisps, not ideal..... tea was a bowl of my mutton shank and veggies with nuts, chocolate and a small apple for afters. Butcher's day today.
I am re-reading Dorothy Hartleys book on traditional English cooking and I am going to cook one of her recipes today, braised beef. I shall do it in the slow cooker. You grease the bottom of the pan with beef fat and sprinkle condiments on it, then half fill with shredded root veggies, lay in the meat (I shall get a piece of braising steak) top up the pan with more shredded veggies, one tablespoon of water to start the cooking off, bang the lid on and leave alone for at least 5 hours on very low heat, don't open the lid. I think it might be OK!

The kitchen was full of a wonderful cooking aroma yesterday from the beef. I had steak pudding with the last of the mutton and veggies for dinner, not a full bowl. For tea I had a Scotch Egg, mushy peas and just a touch of the shredded carrots and parsnips from the braised beef. The gravy is very sweet and it needs a bit more salt.
I stirred the slow cooker last night after it had been cooking slowly for eight hours. The meat has totally dissolved into the veggies, you can only detect it in the mouth. I have learned something as well, if you use some veggies that have high moisture content like a juicy onion or really fresh carrots you don't need to add water. I shall apply this to my normal stews.....

Straight braised steak and veggies X two for dinner and tea. Usual afters of 20gm of dark chocolate, nuts and a small Cox apple. The slow cooker has done a good job the steak and veggies have a lovely flavour. I thought at first I had put too much pepper in but it has calmed down and is just right! Amazing how these slow cooked dishes transform and improve over a couple of days....

I slow roasted a breast of lamb hacked into pieces because i couldnt be bothered to debone it. Plenty of chopped onion, garlic and pepper gave it a lovely flavour. We also had some roasted butternut squash and red cabbage from the garden with cauli and broccoli. The red cabbage cooked to a crisp but was still tasty!

You did better than I did Wendy. I replicated Dorothy's old pot pie recipe in the pressure cooker but it's so long since I used it I forgot the cardinal rule, don't do the meat with the veggies because they overcook! The meat is fine, the gravy superb after following the minimal liquid rule (I used a small carton of apple juice that was hanging about from my hospital recommendations and some lemon juice and water) but the veggies are grossly overcooked. Still good grub but it needs rescuing! (tastes lovely though....)
I had the braised steak and veggies for dinner and tea and there's a helping left for today's dinner.

Made a tomato, herb and veg rich sauce, then blitzed it with the liquidiser.
Browned some homemade meatballs ( with Piri Piri)...cooked some Pasta and shoved the whole lot in a casserole dish with knobs of Cheddar Cheese. Threw loads of fresh chopped Spinach in too before jamming the lid on. Shoved that in the oven while we went upstairs to hang/fix the two pelmets. By the time we got back downstairs and poured a glass of wine, dinner was ready. And soooo very yummy it was. Couldn't eat what was on my plate, as my eyes were bigger than my belly ( as usual). We really can't "do" big serves any more. A small bowl is enough these days.
No afters of any sort. Tummies too full. ( plus the weather is warming up and we are heading toward living on water and lettuce leaves for the next 4 months!)

We're into meat stew season Maz. A friend of mine who lives on chocolate biscuits always complains of the cold......
Sorted out the meat and veg that I pressure cooked. The meat is perfect and extra al dente veggies give it the crunch, it is all in the slow cooker (with two full roots of garlic) and will be fine.
Straight veggies for dinner and the last of the braised steak and veggies for tea.....

The mutton and veggies have melded nicely. All the veggies are in the slow cooker now and I had it for dinner and tea. The meat is lovely, tender and succulent. Very happy with it. Grub like this is excellent for keeping you warm, remember the Ready Brek lad with the glow? The usual afters of 20gm of dark chocolate, a few nuts and a small Cox Apple. The English Cox apples are in early this year and are superb, the best I can remember. I know that theoretically they are sugar and not ideal but I think the other benefits of an apple a day are worth the slight transgression.
