All my mutton is on the bone..... Slow cooking is the way to go with any meat! Far better gravy.
Had steak pudding for dinner and small pork pie for tea both with peas. Slow cooked mutton all day yesterday, will cook veggies and make stew today.

Steak pudding and mashed parsnips for dinner. Mutton stew for tea, it is coming to nicely!

I am about to turn the computer off and wander downstairs to do something with a lump of Minced Beef that has thawed out by now. That is...if I can straighten up after sitting in this chair, getting carried away with Ancestry for the past 5 hours. Backside probably welded to the seat!

It was a cold, wet morning and Dave was working ( on his computer in the Study). We turned off at the same time, because the weather was good enough to go for a walk. Then I made meatballs...
It was a very productive morning for both of us.

Mutton and veggies X two for dinner and tea. So easy to eat well with a slow cooker and tolerance of the same meal over and over again. Good grub as well! Grass fed meat and veggies.....

We don't eat Red Meat more than once ( or at most) twice a week. Tonight was griddled Curried Chicken/Red Capsicum/Red Onion with Homemade Coleslaw ( which contains finely chopped Spinach) in a low cab Wrap.
Sitting back, feeling satisfied...knowing my Diabetes won't fell me at the knees...

I have been requested to make Pasta Carbonara tonight. Not my favourite meal...small serve for me and I will push the Pasta to the side.

Why not just make a separate dish for yourself based around the lardons or whatever variety of ham you are using?

I managed, Panbiker. Usually I would do a variant meal but couldn't be bothered tonight. I boiled some Cauliflower and Broccoli and only had a smattering of the Pasta Carbonara. Managed to keep my BSL to 7.1 ( 2 hours after eating).
I am not too disappointed. Sometimes I must live in the real world - a cold night here with the wind whistling round the corners of the house. I will do better tomorrow night.
I use Short Cut Bacon in my Carbonara. ( not smoked. I don't like smoked Bacon)

I feel myself slipping into another one of my "I don't feel like cooking" stages. The whole cycle of going to the supermarket and buying the same old ingredients week after week after week (hubby won't try ANYTHING new, refuses to eat take-away and does not cook). Then cooking the same old meals over and over again...aaaggggh!...I am so bored with the whole process. It drives me insane. :laugh5:

Easy answer Maz, cook for yourself and leave hubby to support his own sky. He will either starve or learn to look after himself. :extrawink:

Yes, I do from time to time but your, (hubby won't try ANYTHING new, refuses to eat take-away and does not cook). seems to be adding to the frustration. I cant understand blokes who cannot look after themselves, it's just not right.

Couldn't agree more. I love my cooking and am always tweaking the way I make mutton Stew.
Yesterday I had sausages and fried eggs for dinner. Tea was Manx kipper fillets and peas with chunky chips for tea. I get the chunky chips frozen from the Cathedral of Choice because I can just deep fry a few and not have to eat a whole bag of spuds. Bit like Wendy's occasional treat!

Early easy tea last night as I was going to blood donors. I had a portion of previously made, chilled chicken, tomato and pasta from the freezer. To reinforce my previous statement a dish such as that is not rocket science or hard to cook.

1 x diced chicken breast
1 x onion
1 x tin chopped tomatoes
80-100g pasta twirls
Chilli if you want to spice it up a bit. Shove a bit of garlic in as well (if you are not Maz).

Fry the chicken with the onion, set off the pasta. When chicken is sealed add the tomatoes, add chilli if you want, fresh or flaked. Simmer until the pasta is cooked. When pasta is done drain and add to the chicken pan, stir and serve or shove it in the oven with a bit of cheese on top or whatever. 20 minutes to prep and make. Enough for two servings.

Ok ( :good: ) no judgement. But Pasta is not my friend ( puts me blood sugar up)... and I have never found reheated Pasta very nice anyway. :laugh5: just a personal thing, when it comes to Pasta...two rules... "Fresh is best" AND "homemade is even better"
( gawd... : :juggle: :I expect I am so very very fussy)

I know you are, lets not say fussy, discerning Maz and don't do pasta (for medical reasons) or garlic (which is good for you) :extrawink: I was thinking more of something that your hubby could make. Not rocket science was the key so no excuse to play the can't cook card. Won't cook is a management issue.

Oh lord no...what I am saying in regard to my hubby not cooking, is that there is a world of difference between a home-made pasta meal and a PACKET pasta meal...which I have watched him cook ( in horror) with a whisk.
( complete "mush!")
( I have always owned up to my OCD tendencies...but pasta cooked with a whisk is "mush"... And not acceptable on any level :laugh5: )

I was allowed to choose the menu and cook tonight😁. I did chicken in a creamy tarragon sauce with fennel. I used to serve it with pasta but i can honestly say its much tastier without the stodge, just some green veggies.
