Steak and onions with veggies for breakfast. Tea was a straight rib steak with sun dried tomatoes..

Brie, bacon, lettuce and tomato in a low GI bun for lunch. Not made a decision on tea yet, we're off out to The Bridge Inn in Padiham this evening. Middle son is performing with Overlord (classic rock covers band), first live gig since Dark Horse.

Our Jack is coming up for tea so we are having a chicken dinner with the normal trimmings, yorkshires, roast and mashed potato, peas, carrots, sprouts, rhubarb crumble to follow.

Thanks Ian. A roast dinner sounds good but I'd have to pass on the potatoes, I could probably manage one roastie without bumping my sugars up too much.
Might treat ourselves to something out, the gig doesn't start until 9 so plenty of opportunity to find somewhere. It's making a decision on what we actually want that's the stumbling block at the moment :biggrin2:

We didn't dine out, I cooked spicy meatballs, butternut squash wedges and a tomato and basil sauce. It went down very well and I've even got time for a nap before we go to Padiham. A quick traffic report, Padiham High Street is closed so I've got to go via the M65 and Gannow Top.

Was that pic taken at Gawthorpe Kev?
I had three eggs and sun-dried tomatoes for breakfast. I cooked yesterday but just had straight veggies for tea.

I maximised use of the chicken roast we had on Saturday today. Chicken carcass and the rest of the remains went in the pan for half an hour to bubble with enough water to cover. Diced three potatoes and cooked them separately with three diced carrots. Sweated an onion down with three garlic cloves some chili flakes and a good measure of oregano. Sieved the chicken stock and stripped the remaining meat from the carcass, adding to the stock along with the rest of the prepared veg and onions etc. Added a chicken and a vegetable stock cube and a couple of spoons of chia seeds to thicken, whacked it with the hand held electric whizzer thing we have, adjusted seasoning and I have a pan of chicken and veg soup. Letting it cool off then it will go in the freezer in suitable batches.

I'm having home made cottage pie for tea, we had some mash left as well. :extrawink:

Today it's going to be sausage, egg, mushrooms and tomatoes for tea. had a Caesar Salad for lunch, went to Boundary Outlet as Paulette wanted a new jacket so we went into their Bumbelinis Restaurant. It would have been rude not to :biggrin2:

I made an Orange Baileys cheesecake and treated myself to a slice. It was very nice, even if I say so myself. The base was half a packet of ginger biscuits whizzed up in the food processor with some cubes of unsalted butter. The topping was a tub of mascarpone, double cream and a few good glugs of Orange Baileys Irish cream into the food processor with the mixer attachment on. Relatively low sugar (the Baileys and the ginger biscuits) but a high fat content. I only had a small slice.
