Benzene used to be made from the light oil fraction of coal tar generated during coke production but it now comes mostly from petroleum (crude oil).

The word `oil' can be confusing because it's used mainly to define a substance on its physical properties, not chemical. If it flows at ambient temperature it's likely to be called oil; if it's solid then it's a fat or a tar. This mode of definition falls down when we take variations in ambient temperature into account. For example, palm oil is called `oil' because it's a liquid in the tropical countries where the oil palm tree grows - but it's a solid fat here in the UK.

Coal and petroleum have different geological origins. Coal formed from fallen trees decomposing in bulk in swamps, which is why it has some layering and fractures (cleats). Petroleum formed from algae that died and fell into sediment on the sea floor. Over millions of years of geological heat and compression the molecules in the wood cross-linked to form hard, solid coal. The algae didn't cross-link to the same extent and yielded an oil made up of individual fatty molecules. Jet (as in Whitby jet) formed from tree trunks that fell into a river or into the sea and were individually metamorphosed, probably absorbing oil from decomposing algae and giving a more uniform texture. The term `sea coal' has been used in different ways over the centuries, to refer to coal washed up from the sea, coal delivered by ship, or soft coal as opposed to anthracite. Just because coal gets washed up from the sea it doesn't mean it was formed in a marine environment. It was formed on land but over millions of years of plate tectonics and continental drift that bit of `land' is now under the sea.

Cleaners come and go but you still can't beat old-fashioned Vim or this modern substitute for getting rid of baked on dirt on a pan or cleaning a stainless steel sink. It's a mild abrasive so don't use it on ceramic hobs!

A good way of economising on food is to buy the very cheapest cuts of meat and cook them slowly! This slow cooking is the key. I have oxtail in the slow cooker as I write, it's cheap and fatty but still makes the basis of a good stew if it's treated with respect.

I often get quite exercised by celebrity chefs who assure us that everything should be undercooked, meat should be 'pink' and veggies al dente. There is nothing wrong with cooking a chicken until it falls off the bone or veggies until they are soft. Indeed, if you cook swede, carrots and parsnips well they release their sugars and I like the taste. Cheap cuts of meat improve with long slow cooking and you get the stock out of the bones. So ignore them and cook your own way, you may lose some vitamin content but you lessen the chance of getting food poisoning! Not a bad trade off in my book.

As I think you know, I am not a fan of vegetarianism or it's rabid wing of veganism. However, due to my industrial cook-in on Sundays I end up with meat stew in the slow cooker and pure veggies in a big pan on the hob. I enjoy straight veggies from the hob just as much as the meat stew and veggies and I am sure the variety is good for me.

The microwave oven is back home and working fine. It turned out that the cooling fan had been AWOL since day one. It has a new one now and the efficient internal thermal overload switches have stopped it frying itself. That can be crossed off my list.
This suggested today's tip which is an oldie but worth repeating. If something is nagging you, like a dripping tap or a flickering lamp, don't live with it! That's what Mr Pirsig described as a 'gumption trap'. Do something about it and cross it off your list! I suspect I am a bit compulsive on this score, something to do with living with machines all my life, but it leads to a very peaceful life and can avoid actual danger at times.

You're carrying out `Good Practice'. Having worked in laboratories with dangerous microorganisms, dangerous chemicals, inflammable solvents and compressed gases I'm a bit OCD about Good Practice. I've had people take the Mickey about it but at least I'm still here!

One thing machines have taught me, particularly the beasts that are bigger then you, is that if you try to fight the laws of nature you are on a hiding to nothing so it's a good plan to keep your eyes and ears open and nip any digression in the bud.
The simplest of these in my kitchen is my daily bleach routine that ends up with my tap handles, tap spout outlet, sink brush, Scotch Pad, sink and drinking cup sterile at least once a day. A lot of bacterial activity nipped in the bud! Trying to cut my finger off the other day in the shed is a good example of what happens if you let your guard down!
That's reminded me, must order a new face shield for the shed! (Done!)

My new general purpose glasses will be safety glasses with side shields. A bit late in the day! First I have ever had but the parlous state of my right eye has nudged me into shutting the stable door even though the horse might have bolted. That and a new face shield should do the trick. Better late than never! If you are younger than me look after your eyes!

A number of people we know have recently had very bad virus infections, possibly flu. They've been unable to carry on as usual and had to stay in bed, even though they are young and fit and normally very healthy. We need all the help we can get at the moment to avoid these infections, much of which is spread by contact. Washing your hands often is a good way to minimise the danger as well as helping to prevent spreading infection (any of us could be a `symptom-less carrier'). Another aid is a long-lasting disinfecting hand wash such as `Carex Complete, Protect+Plus'. This is claimed to provide 2-hour protection between washes. So washing our hands with this before going to shops, cafes, pubs etc or before doing a lot of hand-shaking as at meetings and the like should help prevent getting infected.

Good advice! Since I discovered disposable vinyl gloves my hands have never been as clean!

Face shield has arrived..... Elfin Safety will be pleased.
Anchovies, sardines or pilchards added to a meat stew always enhance the taste. (I put the marinade from the herrings in as well.....)

HERE'S the recipe for making Garum if you want to try it. Leaving it in the sun might be a bit of a problem.......
