Ian urged the making of chicken soup from the carcass a while ago, but was rebuffed. Let me urge it too. Boil the bones, discard - then add the drippings from the roasting and about two teaspoons of bouillon / stock powder. It's expensive, but you don't need much. Then the usual veg - whatever you have lying about.
I'm sure I don't really need to say all that for such an erudite audience.
Result - delicious healthy and frugal, and makes you feel virtuous.
